FIESTA RELISH


Ingredients:

2/3 cup canned black beans, rinsed and drained
3 tablespoons dried yellow bell pepper
3 Tablespoons diced plum tomato
1 Tablespoon red bell pepper
1 Tablespoon minced shallots
1 Tablespoon fresh lime juice
¼ teaspoon ground cumin
1/8 teaspoon cayenne

Directions:

Combine all ingredients in a bowl. Serve relish chilled or at room temperature. Great for salad toppers, for a side relish, or for good ole fashioned dip for tortilla chips.
